DIPS:
BREAD/ROLLS:
Sonja's Basic Wheat Bread
Easy, quick and good! I've been using this recipe since I was a 19 year old newlywed and it's still one of my favorites! Nothing's better than a nice, warm, fresh piece of homemade bread with butter! Mmmmm!
DRINKS:
Sweet Southern Iced Tea
Real Southern Ice Tea is sweet tea. Very sweet. A MUST: When serving Southern Sweet Tea, always FILL the glass with ice. All the way to the top, then pour your tea... We have slices of lemon or sprigs of mint in our Sweet tea... try it and see what YOU like!
Russian Tea
In my opinion, one of the best winter drinks to warm to soul! A great gift any time of the year...put the mix in a small canning jar, cover the lid with a little piece of cloth tied on with ribbon and a cinnamon stick tied in the bow!
Pomegranate Smoothie
One of my favorite summer drinks! Easy, yummy and low-fat! A smoothie, by the pool with a sprig of mint and berries...delightful.
MAIN DISHES:
Southern Fried Chicken
A favorite main course served in the South and in my home is Southern Fried Chicken! Here is an authentic Southern recipe from Mississippi.....
Norwegian Meatballs - Kjottkaker
My mother came to the United States from Norway in 1963. We grew up eating Scandinavian food and although, I have yet to get her secret recipe, here is one I found years ago and it is almost as good as mom's!
Spicy Marinara Sauce
This recipe smells great and tastes better! Requested by our son when he came home from US Marine Corp bootcamp, it is a favorite! After all those weeks at bootcamp Jake appreciated home cooking with a renewed sense of gratitude!
Sonja's Special Chicken Pot Pie
Great as left-overs! My daughter Jodi likes to eat this warmed up with pesto lightly spread on top...my husband sprinkles hot sauce on top....when I make this recipe it is eaten, 'morning, noon and night', until it's gone!
Southern Fried Catfish
This is another favorite! We serve our Fried Catfish with Collard Greens, Black-eyed Peas and Hushpuppies. A tall glass of Southern Sweet Tea is a must! This recipe also turns out very good over an open fire on a summer night....
SIDE DISHES:
Yummy Potato Salad
What's better than nice, cold Potato salad on a hot summer day? This recipe is made for about every summer picnic we host or attend!
Seven-Layer Salad
Always a favorite at picnics and potlucks, this is a salad you can put your own spin on, changing out some of the layers with different ingredients. Carrots, tomatos, ect...
DESSERTS, Cookies and Yummy Stuff:
Krumkake
The day after Thanksgiving every year, my mom gets together with her grandchildren, to make Krumkake..being careful not to burn fingers, treats and children's laughter go hand in hand with this fragile, beautifully imprinted Norwegian cookie!
Ris a' l'amande (Danish Rice Pudding)
As kids we loved this part of Christmas Eve or as a special treat throughout the year on special occasions! Ris a l'amande is a tradional Danish dessert. Tradition: When served with the traditional Danish Christmas Eve dinner, one whole almond is placed in the pudding. The one who finds the almond is the one who gets the prize!
Aebleskivers
My dad emigrated from Denmark and with him came Danish Aebleskivers! For as long as I can remember, aebleskivers have been served in my home. You can find my home filled friends, family, laughter and celebration as several Aebleskiver pans cook batch after batch of Aebleskivers on the stove.
They are good served anytime of the year, but they were always a part of midsummer and Christmas celebrations. On "Lille Julaften" , or "Little Christmas Eve", December 23rd.
Peanut Butter Balls
These have been a favorite in out home at Christmas and was always on the Christmas platter that went to friends and family...I had more fun making them with the girls in the kitchen when they were little...with Christmas playing, hot chocolate and lots of laughs.
Rosettes
These beautiful rosettes, where something I started making in my own kitchen as an adult. When we were little, it was "far too dangerous" for little ones to be near the stove with a pan full of grease!
Coconut Balls
These go well with the other chocolate goodies we make at Christmas time. I always rolled our mounds balls into a smaller ball compared to the peanut butter balls and the cherry balls.... a perfect size for little hands to roll! This was always fun for the kids when they were little and it kept them busy while I was busily dipping!
Snickerdoodles
Making these cookies brings back fond memories of my sister and I in the kitchen when we were kids. Snickerdoodles are easy to make!!
